I'm procrastinating today so thought I'd share with you this amazing, delicious treat that works beautifully as a breakfast, snack or pudding.
I am in love with Chia seeds. They're super high in Omega 3's, meaning they're good for your brain health and memory function, as well as being high in protein to keep you full and stave off those sugar cravings. They are also an economically sustainable seed, meaning no pesticides are needed and no one gets hurt in their growth or harvest.
Blueberries are a little superfood full of antioxidants to prevent disease and aging. Cinnamon controls blood sugar levels, decreasing cravings and improving insulin resistance.
CHIA PUDDING – SERVES 2
3 tablespoons chia seeds
1 cup unsweetened almond milk or coconut milk/cream
1 tsp Cinnamon
1/2 cup Berries
1 -2 dessert spoons desiccated coconut/coconut flakes
Optional: dessert spoon maple syrup, coconut nectar or raw honey
Method: soak the chia seeds in the milk, coconut and cinnamon in the fridge for 15 - 30 minutes,
stirring every 5 mins or so. Add blueberries and optional maple sweetener to serve.
