Salmon contains healthy protein and Omega 3 fats for brain health and memory function, as well as good cholesterol. Kale is high in antioxidants and iron, avocado guacamole contains Vitamin E for skin health. Lemon juice is alkalising and boosts metabolism.
SALMON PATTIES - SERVES 2 (MAKES 4 - 6 patties depending on portion size)
1 400g Wild Alaskan tinned pink or red salmon
2 shallots, chopped
1 tsp parsley flakes
Juice of half a lemon
Almond meal or coconut flour to coat
coconut oil for cooking
Mix together all ingredients, spoon palm sized patties onto a plate dusted in almond meal or coconut flour. Heat a frypan with 1-2 tspns coconut oil and place patties in fry-pan, cooking on medium heat for 4-5 minutes each side. Serve with kale salad and guacamole
